Date Night! 😍 It's no secret that BOSA is one of the hottest restaurants in Bend, making it ideal for date night. Here, we had one of the must-try pasta dishes of the season. Saffron Spaghettoni 🍝 This thick spaghetti pasta is tossed in wild and farmed mushrooms, Beurre Monté (aka, emulsified butter), basil, parsley, and chives, then topped with plenty of parmesan.⁠

If you enjoy their Cacio e Pepe, you'll love this seasonal dish! The same Bigoli pasta is cooked in saffron, giving it its golden hue. The wild mushrooms play the starring role in this dish, as their rustic and hearty nature adds texture and rich flavor to this pasta.⁠

If you haven't yet been into BOSA, add it to your list ASAP. While reservations are strongly encouraged, you can try for a walk-in seat at the bar. We've been lucky to snag a few of those over the past year when dining at BOSA last minute!⁠

Plus, they have a wine selection to swoon over, and an in-house Sommelier who can offer wine suggestions and pairings. And, please don't forget about dessert! Last season, we featured BOSA's lemon cardamon cake which is made with lemon blueberry creme and served with mascarpone gelato made by Bontá exclusively for BOSA!⁠

🥩 RBC 🥩 Ok, guys, this is a good one… Rancher Butcher Chef 🤤 Now, y’all know that we do NOT rate or critique restaurants. However, I’m breaking the rules for this one. ⭐️⭐️⭐️⭐️⭐️ Five stars ALL 👏 THE 👏 WAY 👏

First off, let’s introduce RBC, the newest resident of The Grove (in the Assembly building). You may know their food from places like Toro Bravo in PDX, and now they anchor The Grove.

As a ranch-to-table restaurant, RBC has partnered with 7-Mile Creek Ranch in Ft. Klamath and raise GAP 4 beef in accordance with Animal Welfare Certification.

Ok, now let’s talk food. Wow. We started out with cocktails at the bar while awaiting our reservation, as RBC was completely bustling on a late weekday evening. Their cocktail menu is as impressive as it is expansive.

We started with a round of housemade brioche pop-ups served with crème frâiche butter. Then, we enjoyed many rounds of small and large plates:

🥓 Bacon-wrapped dates drizzled in a spiced honey
🥩 Class steak tartare topped with a soft egg and served with grilled miche bread with just a hint of garlic
🥗 Radicchio salad, wow! Fresh radicchio, thick-cut bacon lardons, a 7-minute soft egg, Green Goddess dressing and the perfect amount of manchego cheese
🍝 Spaghetti Western Carbonara—get ready for this one! Squid ink pasta, house smoked guanciale, an egg yolk and grated manchego cheese, all tossed fresh at the table!
🍣 Seared diver scallops served with a hazelnut romesco and fennel salad
🥩Snake River Farms 16 oz Ribeye cooked perfectly medium-rare and served with bearnaise sauce and creamy horseradish

Listen, we tried for dessert, but our jeans were literally ripping at the seams (with photo proof). There’s no doubt that RBC is set to be a staple in Central Oregon, and it’s already made a lasting impression.

Visit them at The Grove Wednesday through Sunday from 4:30 to 9:30 pm for dinner service, and Fridays and Saturdays from noon until 4pm for butcher counter service. @rbcbend
